Maintaining of temperature records and other HACCP procedures to demonstrate compliance is essential.To ensure that all meat products, poultry, fish are butchered to the correct specification as required by the executive chef. To be responsible for ordering all meats requirements through the main stores and ensuring proper use of the same.To be responsible for assessing and approving the quality of all meat products along with the chef at the time of receiving.
To ensure that his subordinate staff maintain high standards of personal hygiene. Conduct daily inspection of his personnels uniforms, hair, nails, etc. to ensure they conform to the required standards.To be responsible for safety matters related to his areas of supervision and implement Company HSE Policy & Procedures.To conform to the Companys guidelines related to his area as detailed in the Companys Quality Assurance Program.To perform any other duties requested by his superiors out of normal routine but within the scope of work.
