Job Summary
As a Food and beverage manager you will be responsible for overseeing the day-to-day operations of the restaurant at Heenat Salma Farm. They are responsible for ensuring that all the food and drinks are of the highest quality. A few of the main duties that includes designing unique menus, handling customer complaints, creating company policies, and complying with food and safety regulations. You will be also responsible for preparing reports on how the restaurant is performing.

Responsibility:
- Ensuring that the service offered to the guest is personal and memorable, that guest needs are anticipated, and requests followed up. Building relationships and loyalty with our guests, ensuring that they want to return to the farm. Connect with guests at every possible opportunity.
- Leading, motivating, and managing the Food and Beverage team for maximum operational efficiency both in our Kitchen restaurant and the lodges.
- Analyze and improving food cost, beverage cost, payroll cost, expenses, and sales volumes. Meeting and exceeding the daily, weekly, monthly, and annual targets.
- Completing stock inventory takes as required on a weekly and monthly basis and maintaining good stock control working closely with the finance team.
- Controlling inventory through the purchasing system, ensuring a good level of stock at all times, highlighting products that are performing well and those that are not. To be constantly looking for new products to improve guest experience.
- Taking an active involvement with Sales and Marketing activities such as social media, PR, and promotions, working closely with the Sales and Marketing team.
- Actively taking a lead on team training to ensure that they follow the brand guidelines and analyzing team performance to highlight areas for development with assistance from the Human Resources Manager.
- Ensuring an effective structure of communication within the team is always maintained, that team members are fully informed of all relevant information pertaining to their roles. This includes but is not limited to handovers, daily operation reports, monthly staff meetings and memos.
- Training and developing the team, highlighting team members who have potential to develop within the business and make them ready for promotions.
- To handle feedback, comments, complaints, and queries with immediate action, speaking to all departments and persons involved, following up with the guest and recording all actions taken.
- Working closely with all departments at Heenat Salma farm to maximize service opportunity and increase revenue. This involves arranging meetings and attending all meetings as required.
- To maintain appropriate standards of dress code, conduct, uniform, hygiene, appearance and posture of the Food and Beverage team. Managing performance through regular feedback, counselling sessions, investigations, disciplinaries and suspending team members that are deemed out of line with Heenat Salma farm policies, with the support of Human Resources.
- To be fully conversant with all food menus, wine lists, cocktail lists, beverage lists and offers impacting food and beverage. To be fully conversant with food allergens and ingredients within food and beverage items. Liaising with the Head Chef where necessary.
- Preparing reports to be presented to the directors on a weekly and monthly basis.
Experience
- least 3 years experience working in sustainable & organic service sector with F&B cost and stock control and preparing budgets.
- supervising/managing a team including conducting appraisals, setting individual KPI's, managing holiday and roaster and managing performance.
- flexible attitude towards work. Able to cover all shifts Monday-Sunday filling in gaps where required.
- Fully conversant with food and drinks including healthy and non-alcoholic cocktails.
