The Role

As the Food and Beverage Manager, you will be responsible for overseeing the entire food and beverage operations within the hotel. You will ensure that all dining outlets, including restaurants, bars, and banqueting services, deliver exceptional guest experiences while maintaining the highest standards of quality, efficiency, and profitability. Reporting directly to the Hotel Manager, you will work closely with other department leaders to align food and beverage strategies with overall business objectives, manage budgets, and foster an environment of creativity and excellence within the team.

Key Areas of Responsibilities

Please note that the responsibilities outlined below are not exhaustive. Red Sea Global Hospitality team members continuously innovate in caring for the needs of the business, their guests, and their colleagues. As Food and Beverage Manager, you will need to:

Operational Management:

Oversee the daily operations of all food and beverage outlets, ensuring that service standards are consistently met, from food preparation to guest service. Monitor the quality of food and beverages served and ensure that all operations are in line with health, safety, and hygiene standards.

Guest Experience & Satisfaction:

Ensure that all guests enjoy exceptional dining experiences by maintaining high standards of service, quality, and presentation. Address guest feedback promptly and professionally, making adjustments when necessary to exceed expectations and enhance the guest experience.

Team Leadership & Development:

Lead, motivate, and develop the food and beverage team, fostering a positive work environment that emphasizes teamwork, accountability, and professional growth. Provide ongoing training and development to ensure all team members possess the skills required to provide outstanding service.

Menu & Concept Development:

Collaborate with the Executive Chef and other key team members to develop innovative, seasonal menus that reflect the hotel's brand and exceed guest expectations. Ensure that the food and beverage offerings align with market trends, local tastes, and sustainability goals.

Budgeting & Financial Management:

Manage the food and beverage department's budget, ensuring that all operational costs, including food, beverages, labor, and supplies, are controlled. Implement strategies to increase revenue while maintaining profitability, and report financial performance to the Hotel Manager.

Inventory & Stock Control:

Oversee the inventory of all food, beverage, and related supplies, ensuring that stock levels are maintained and that proper ordering, storage, and rotation procedures are followed. Monitor wastage, theft, and loss, and implement measures to minimize these issues.

Quality Control & Standards Compliance:

Establish and maintain operational procedures to ensure the highest level of service and consistency in food and beverage delivery. Conduct regular inspections of food, beverages, and service standards to ensure compliance with internal guidelines and regulatory requirements.

Cross-Department Collaboration:

Work closely with the Housekeeping, Front Office, Engineering, and other departments to ensure seamless service delivery across all operations. Collaborate with event and banquet teams to ensure that food and beverage services align with guest expectations for private events, conferences, and special occasions.

Health, Safety & Hygiene Compliance:

Ensure strict adherence to health and safety regulations, including food safety, sanitation standards, and employee safety. Conduct regular training on hygiene and safety practices for the food and beverage team.

Marketing & Promotions:

Partner with the Sales & Marketingteam to develop and implement marketing initiatives, promotions, and events that drive guest engagement and increase revenue. Ensure that all food and beverage promotions are aligned with the hotel's overall brand strategy.

Sustainability & Waste Management:

Implement environmentally sustainable practices within the food and beverage operation, focusing on waste reduction, energy efficiency, and sourcing locally where possible. Monitor food waste and collaborate with theExecutive Chefto find solutions to minimize waste without compromising quality.

Qualifications and Standards

To succeed in this role, candidates should possess the following qualifications:

  • Education: A Bachelor's degree in Hospitality Management, Business Administration, or a related field; additional certifications in food and beverage management is an asset
  • Experience: Minimum of 8-10 years of experience in food and beverage management, with at least 3 years in a leadership role within a luxury hotel
  • Leadership Skills: Strong leadership abilities, with proven experience in managing and motivating a large, diverse team. Excellent interpersonal skills and the ability to foster a positive, high-performance team culture.
  • Financial Acumen: Solid understanding of budgeting, financial management, and cost control, with the ability to analyze financial data and implement measures to maximize profitability.
  • Guest Service Excellence: A passion for delivering exceptional dining experiences, with a track record of consistently exceeding guest expectations.
  • Operational Knowledge: Comprehensive understanding of food and beverage operations, including service standards, kitchen coordination, inventory management, and health and safety regulations.
  • Problem-Solving Skills: Ability to identify issues, troubleshoot challenges, and develop solutions quickly to maintain smooth operations and guest satisfaction.
  • Communication Skills: Strong verbal and written communication skills, with the ability to interact effectively with team members, guests, and senior management.
  • Creativity & Innovation: Ability to develop creative concepts, menus, and events that elevate the guest experience while meeting financial and operational objectives.
  • Attention to Detail: High level of attention to detail, ensuring that every aspect of the food and beverage service is executed to perfection.
