We are looking for an experienced and creative head baker to join our small team and create exceptional artisanal and pastry goods.

Aspiring to a more thoughtful and slower way of life, Alica is a new bakery/eatery in Jumeira 1 built on the craft of using our hands.
At Alica we specialize in naturally-leavened bread and laminated pastries and offer a weekly changing seasonal lunch and snack menu.
Our ethos is simple: Work with local farms and craftsmen who share the belief that good quality ingredients should be for everyone. We will do our utmost to source local, seasonal and organic produce from the UAE.
Lead and inspire a small team of bakers, ensuring a collaborative and positive work environment.
Supervise daily operations, assigning tasks, and overseeing the production process.
Take an active part in the bakers daily tasks as a team member
Collaboration and report to head chef, both when creating menus and during everyday tasks
Contribute to the development and refinement of our artisanal bread and pastry recipes.
Innovate and introduce new, seasonal, and unique products to captivate our customers palates.
Creating recipes based on locally available products
Maintain the highest standards of quality for all bakery products.
Conduct regular taste tests and visual inspections to ensure consistency and excellence.
Production Planning:
Plan and organize daily production schedules, taking into consideration sales trends and inventory levels.
Manage inventory efficiently to minimize waste and optimize freshness.
Training and Development:
Train new team members and provide ongoing guidance to enhance their skills and knowledge.
Foster a culture of continuous learning and improvement within the bakery team.
Ensure compliance with all hygiene and safety standards.
Implement and oversee proper sanitation procedures in the bakery.
Stay in touch and organize the dishwasher's work
Collaborate with the front-of-house team to understand customer preferences and feedback.
Engage with customers to share your passion for baking.
- Our dream type will have the following:
Proven experience as a Head Baker or similar role in an artisan bakery.
Knowledge of bread, sourdough and laminated pastry preparation BOTH MANDATORY
Extensive knowledge of artisanal baking techniques and a strong understanding of ingredient functionality.
Knowledge about food cost calculation and creating recipes
Creative flair for recipe development and a passion for staying updated with industry trends.
Strong leadership and communication skills.
Ability to work in a fast-paced environment and adapt to changing priorities.
Knowledge of food safety regulations and best practices in UAE
Ability to work with a consultant
