We are looking for an experienced Japanese Pastry Chef to be part of our team. In this role you will ensure a smooth and efficient operation in the Pastry section in relation to the Company Core Process, thus directly impacting the delivery of the experience.
The Japanese Pastry Chef is responsible for creating, designing, and executing traditional and contemporary Japanese pastries and desserts. The chef ensures high standards of quality and presentation, maintains cleanliness and organization in the kitchen, and collaborates with the culinary team to develop new menu items.
Key Responsibilities:
- Prepare a variety of Japanese pastries, including mochi, dorayaki, wagashi, and castella.
- Ensure consistency in taste, quality, and presentation.
- Innovate and create new Japanese dessert recipes.
- Adapt traditional recipes to modern trends and dietary requirements.
- Maintain high standards of cleanliness, hygiene, and food safety.
- Conduct regular quality checks on ingredients and finished products.
- Monitor and manage inventory of baking ingredients and supplies.
- Place orders to replenish stock as needed.
- Work closely with the culinary team to plan and execute dessert menus.
- Participate in menu planning and special event preparations.
- Train and supervise junior pastry chefs and kitchen staff.
- Ensure all team members adhere to kitchen protocols and standards.
Qualifications:
- At least one-year proven experience as a Pastry Chef, with a focus on Japanese pastries.
- In-depth knowledge of traditional Japanese dessert techniques and ingredients.
- Creativity and a keen eye for detail in pastry design and presentation.
- Excellent time management and organizational skills.
- Ability to work in a fast-paced environment and handle multiple tasks efficiently.
- Thorough understanding of Japanese pastry-making techniques, ingredients, and cultural practices.
- Proficient in using Japanese pastry-making equipment such as wooden molds, steaming baskets, and traditional Japanese utensils.
- Excellent organizational and time-management skills, with the ability to multitask and prioritize tasks efficiently.
- Strong communication skills, with the ability to work well in a team environment.
- Creativity and innovation in developing new and unique Japanese pastry recipes.
- Degree in culinary arts or pastry-making is preferred.
