Job Description

Pastry Preparation:

Responsibilities of a Pastry Commis with Croissant Experience
  • Assist in the preparation and production of a variety of pastries, with a focus on croissants.
Follow recipes and instructions from the pastry chef accurately.
  • Ensure all ingredients are measured and mixed correctly.
  • Dough Handling:
Prepare and laminate croissant dough, including proper folding and rolling techniques.
  • Monitor dough consistency and make adjustments as needed.
Ensure dough is proofed and baked to perfection.
  • Baking:
Operate ovens and other baking equipment properly and safely.
  • Monitor baking times and temperatures to ensure consistent results.
Adjust oven settings and baking conditions based on pastry requirements.
  • Quality Control:
Maintain high standards of quality and presentation for all pastries.
  • Conduct regular checks to ensure the taste, texture, and appearance of croissants meet quality standards.
Implement corrective actions for any deviations from quality standards.
  • Sanitation and Safety:
Maintain a clean and organized work area.
  • Follow all health and safety regulations, including proper food handling and storage practices.
Clean and sanitize equipment and utensils regularly.
  • Inventory Management:
Assist in managing inventory levels of ingredients and supplies.
  • Report any shortages or issues to the pastry chef.
Assist in ordering and receiving supplies as needed.
  • Collaboration:
Work closely with the pastry team to ensure smooth operations.
  • Communicate effectively with team members and other kitchen staff.
Assist in training new staff or interns as required.

Requirements for a Pastry Commis with Croissant Experience
  • Previous experience in a bakery or pastry kitchen, specifically with croissant preparation and baking.
Familiarity with dough lamination and croissant-making techniques.
  • Skills:
Strong knowledge of pastry techniques and baking processes.
  • Attention to detail and precision in measuring and mixing ingredients.
Ability to work efficiently in a fast-paced environment.
  • Good organizational and time management skills.
