Job Description:
We are seeking a highly skilled and experienced with a minimum of 10 years in the industry to join our team in a Cost Control role within our pastry department. The ideal candidate will possess a strong background in pastry production while having in-depth knowledge of cost management, inventory control, and budgeting to ensure the profitability and efficiency of the pastry operation. Key Responsibilities:
- Cost Management: Oversee the budgeting and cost control for all pastry operations, ensuring that all pastry production aligns with set cost targets while maintaining high-quality standards.
- Inventory Control: Manage inventory levels of all pastry ingredients and supplies, tracking usage, reducing waste, and ordering as necessary to maintain efficient operations. Implement systems to minimize ingredient loss.
- Recipe Costing: Accurately calculate the cost of each pastry item, considering ingredient costs, labor, and overhead. Continuously review and optimize recipes to maximize profitability without sacrificing quality.
- Waste Reduction: Implement strategies to reduce waste, including portion control, efficient use of ingredients, and proper storage techniques to extend shelf life.
- Vendor Management: Establish and maintain strong relationships with suppliers to negotiate better pricing and terms. Continuously evaluate the cost-effectiveness of ingredients and sourcing.
- Pricing Strategy: Work with management to determine pricing for pastry items, taking into account production costs, market trends, and profit margins to ensure competitive yet profitable pricing.
- Financial Reporting: Monitor and report on food cost percentages, waste percentages, and other key performance indicators (KPIs) related to pastry production. Provide regular reports to management on cost control initiatives.
- Team Training: Train pastry staff on cost-effective practices, portion control, and waste reduction techniques, ensuring all team members understand and adhere to cost control policies.
- Product Development: Work with the creative team to develop new pastry offerings that meet cost efficiency targets while still being innovative and of high quality.
- Quality Assurance: Ensure that the quality of pastry products is consistently high, aligning with the company's standards, while balancing the need for cost control.
Qualifications:
- Minimum of 10 years of experience in pastry production, with a strong background in cost control and financial management in a pastry or culinary environment.
- Proven experience in managing food costs, inventory, and waste in a high-volume, high-quality pastry operation.
- Strong knowledge of budgeting, forecasting, and financial reporting, specifically related to pastry production.
- Experience in optimizing ingredient usage, reducing waste, and maximizing efficiency without compromising quality.
- A degree or certification in culinary arts, business management, or a related field is preferred but not mandatory.
- Strong leadership abilities with experience training and managing pastry staff.
- High attention to detail with the ability to analyze data and identify trends in cost and production.
