We are seeking an experienced and highly skilled Sushi Omakase Chef to join our culinary team. This role is central to creating an unforgettable dining experience through the art of omakase, combining exquisite technique, creativity, and an in-depth knowledge of traditional Japanese sushi with a modern twist. The ideal candidate is passionate about Japanese cuisine, meticulous about presentation, and committed to providing a memorable journey for every guest.
Key Responsibilities:
Omakase Service Preparation: Curate and execute a high-quality omakase menu that showcases seasonal and unique ingredients, traditional sushi techniques, and creative flavor pairings.
Guest Interaction: Provide an engaging and personalized experience, explaining the story behind each course, discussing ingredients, and answering guest questions with a friendly and professional demeanor.
Ingredient Selection and Quality Control: Select, inspect, and manage fresh fish and other high-quality ingredients; ensure all produce meets our standards of freshness, quality, and taste.
Fish Cleaning and Preparation: Expertly clean and prepare a wide variety of fish, including delicate handling and butchering of species like bluefin tuna and other premium fish varieties. Demonstrate skill in portioning and preparing challenging fish to ensure top quality and presentation.
Knife Skills and Sushi Preparation: Display exceptional knife skills for slicing, filleting, and portioning fish, as well as preparing sushi rice to exacting standards.
Kitchen and Station Management: Maintain a clean, organized, and efficient workspace; ensure that all food preparation and storage areas meet health and safety regulations.
Team Collaboration: Work closely with other kitchen staff to ensure smooth service flow and adherence to quality standards; assist in training and mentoring junior chefs.
Menu Development: Collaborate with the head chef to develop new menu items and seasonal dishes, balancing traditional flavors with creative presentations.
Requirements:
Experience: Minimum of [5+] years as a Sushi Chef, preferably in a high-end omakase or sushi establishment.
Skills: Exceptional knife skills, in-depth knowledge of Japanese cuisine, and proficiency in sushi and sashimi preparation.
Communication: Strong communication skills for interacting with guests in a personable, informative manner.
